Leftover Indian Italian cheese fritters

Ingredients :

  • 1 cup leftover Khichdi ( hotchpotch)
  • 1/2 cup leftover sabji (vegetable) ( it can be any kind of leftover cooked sabji)
  • 1/2 cup boiled pasta or leftover pasta
  • 1/2 cup leftover poha
  • 1/4 cup chopped grapes
  • 1/2 cup grated cheese
  • 1/4 tsp thyme
  • 1/2 tsp oregano
  • 1/2 tsp Basil
  • 1/2 tsp black pepper powder ( you can adjust it according to you)
  • 1/4 tsp chaat masala ( optional)
  • 1/2 tsp salt ( adjust it as per your taste)
  • 1 tsp cornflour 

Method :

  1. Take a bowl add Khichdi
     
  2. Then add poha and sabji
     
  3. Pasta and grapes. Grapes gives that tangy flavour when you have a bite.
     
  4. After that add Cheese, oregano, thyme, basil, pepper powder, salt, chaat masala and cornflour
     
  5. Mix it well and make small balls and  slightly coat it  with corn flour . If the mixture doesn't bind you can also add bread crumbs.
     
  6. Heat the  oil in a frying pan and add these balls into the hot oil at high flame and let it cook until golden brown .
  7. Then take it down on a tissue paper to absorb the excess oil from it. Serve it with tomato ketchup or green chutney
